Ingredients

1 large English cucumber, thinly sliced

1 ½ cups grape tomatoes, halved

½ small red onion, thinly sliced

¼ cup fresh parsley, chopped

3 tbsp olive oil

2 tbsp red wine vinegar

1 tsp sugar

½ tsp dried basil

Salt and black pepper, to taste
Instructions

Slice the cucumber, halve the tomatoes, and thinly slice the onion.

Combine all vegetables and chopped parsley in a large bowl.

In a separate bowl, whisk olive oil, red wine vinegar, sugar, basil, salt, and pepper.

Pour the dressing over the vegetables and toss gently.

Refrigerate for 30 minutes to enhance flavor before serving.
