Description

This easy cucumber tomato salad is crisp, juicy, and full of bright flavors. Made with fresh vegetables, herbs, and a zesty vinaigrette, it’s perfect for picnics, potlucks, or as a healthy side to your favorite meals.


Ingredients

  • 1 large English cucumber, thinly sliced

  • 1 ½ cups grape tomatoes, halved

  • ½ small red onion, thinly sliced

  • ¼ cup fresh parsley, chopped

  • 3 tbsp olive oil

  • 2 tbsp red wine vinegar

  • 1 tsp sugar

  • ½ tsp dried basil

  • Salt and black pepper, to taste


Instructions

  • Slice the cucumber, halve the tomatoes, and thinly slice the onion.

  • Combine all vegetables and chopped parsley in a large bowl.

  • In a separate bowl, whisk olive oil, red wine vinegar, sugar, basil, salt, and pepper.

  • Pour the dressing over the vegetables and toss gently.

  • Refrigerate for 30 minutes to enhance flavor before serving.

Notes

  • For milder onion flavor, soak red onion slices in cold water for 10 minutes.
  • Add feta, olives, or grilled chicken for extra flavor and protein.
  • Best served chilled and within 3–4 days of preparation.
