- ¾ cup granulated sugar
- 2 large egg yolks
- 1 teaspoon vanilla extract
- 2 ¼ cups all-purpose flour
- ¼ teaspoon salt
- ½ cup sanding sugar (for rolling)
- 30 pastel-colored M&Ms or similar candy-coated chocolates
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream butter and sugar in a large bowl until light and fluffy.
- Add egg yolks and vanilla extract and mix until well combined.
- Whisk flour and salt together in a separate bowl, then gradually add to the wet ingredients. Mix until just combined.
- Roll dough into small balls, coat them in sanding sugar, and place them on the baking sheet.
- Press an M&M into each cookie ball without fully embedding it.
- Bake for 10–11 minutes or until edges are set but centers remain soft.
- Let cool for 5 minutes on the baking sheet before transferring to a wire rack.
Notes
- Avoid overmixing the dough to keep the cookies tender.
- If dough feels too soft, refrigerate for 15 minutes before baking.
