1/2 pound ground beef (85/15)

1 cup corn (canned or frozen)

2/3 cup condensed cream of mushroom soup

1 cup cheddar cheese, shredded and divided

1/3 cup whole milk

1/4 cup sour cream (or Greek yogurt for a healthier option)

1 teaspoon onion powder

1/2 teaspoon black pepper

1/2 cup bacon (cooked and crumbled, turkey bacon works too)

Instructions

Preheat oven to 375°F (190°C).

In a large skillet, cook ground beef over medium heat until browned; drain excess fat.

Add corn, mushroom soup, 1/2 cup cheddar cheese, milk, sour cream, onion powder, black pepper, and bacon to the beef. Mix well.

Spread the beef mixture evenly in a greased 9×13-inch baking dish.

Arrange tater tots evenly over the beef mixture.

Bake uncovered for 40–45 minutes, until bubbly and golden brown.
