Description

A quick and healthy deconstructed egg roll made in one skillet with lean ground turkey, fresh cabbage, garlic, and ginger in a savory sesame-soy sauce.

Ingredients

Scale
  • 1 lb ground turkey (or pork/chicken)

  • 1 tbsp olive oil, divided

  • 1 small sweet onion, diced

  • 2 cloves garlic, minced

  • 1 tbsp fresh ginger, grated

  • 1 cup shredded carrots

  • 4 cups green cabbage (or 1 bag coleslaw mix)

  • ¼ cup chicken broth

  • 3 tbsp soy sauce (or tamari/coconut aminos)

  • 1 tbsp rice vinegar

  • Salt and black pepper, to taste

  • 1 tbsp toasted sesame oil

Instructions

  • In a large skillet, heat 1 tbsp olive oil. Add ground meat and cook until browned.

  • Add onion, cook until soft. Stir in garlic, ginger, and carrots.

  • Deglaze with chicken broth, scraping the pan.

  • Add cabbage, soy sauce, rice vinegar, salt, and pepper. Stir and cover to cook 10–12 mins.

  • Finish with sesame oil, stir, and serve.

Notes

  • Use tamari or coconut aminos for gluten-free or Whole30.
  • Coleslaw mix speeds prep time.
  • Top with green onions or sesame seeds for extra flavor.
  • Serve with rice for a non-keto option.
