Description

  • 4 large eggs, scrambled
  • 68 oz breakfast sausage, cooked and crumbled
  • 1 cup shredded mild cheddar cheese
  • 1 cup sawmill gravy (homemade or store-bought)
  • Salt and pepper to taste
  • Optional toppings: spinach, diced tomatoes, parsley, avocado slices

Instructions

  • Cook the sausage in a skillet, reserving 2 tablespoons of drippings.
  • Make sawmill gravy by whisking flour into the drippings to form a roux. Gradually add milk while whisking until thickened.
  • Toast the English muffins until golden.
  • Scramble the eggs with a splash of milk for fluffiness, seasoning lightly with salt and pepper.
  • Spread gravy onto each toasted muffin half. Add scrambled eggs, sausage, and cheese.
  • Broil the muffins for 1–2 minutes until the cheese melts.
  • Garnish with optional toppings and serve immediately.
