Description

Ingredients

  • 2 cups frozen tater tots
  • 1 tbsp olive oil
  • 8 links breakfast sausage, casing removed
  • 8 large eggs
  • ⅓ cup half and half (or milk)
  • Salt and black pepper, to taste
  • 1 (16-ounce) can refried beans
  • 8 (8-inch) flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 Roma tomatoes, diced
  • ¼ cup fresh cilantro, chopped

Instructions

  • Bake tater tots at 400°F (200°C) until crispy.
  • Cook sausage in a skillet until browned, then set aside.
  • Scramble eggs with half and half, salt, and pepper until just set.
  • Warm tortillas in a skillet or microwave for easy rolling.
  • Assemble the burritos: Spread refried beans on the tortilla, then add tater tots, sausage, eggs, cheese, tomatoes, and cilantro.
  • Wrap tightly and store in foil or plastic wrap.
  • Freeze for up to one month.
  • Reheat in the microwave (4-6 minutes) or oven (30-40 minutes at 400°F).
