 - 1 tbsp olive oil
 - 8 links breakfast sausage, casing removed
 - 8 large eggs
 - ⅓ cup half and half (or milk)
 - Salt and black pepper, to taste
 - 1 (16-ounce) can refried beans
 - 8 (8-inch) flour tortillas
 - 1 cup shredded cheddar cheese
 - 1 cup shredded Monterey Jack cheese
 - 2 Roma tomatoes, diced
 - ¼ cup fresh cilantro, chopped
 
Instructions
- Bake tater tots at 400°F (200°C) until crispy.
 - Cook sausage in a skillet until browned, then set aside.
 - Scramble eggs with half and half, salt, and pepper until just set.
 - Warm tortillas in a skillet or microwave for easy rolling.
 - Assemble the burritos: Spread refried beans on the tortilla, then add tater tots, sausage, eggs, cheese, tomatoes, and cilantro.
 - Wrap tightly and store in foil or plastic wrap.
 - Freeze for up to one month.
 - Reheat in the microwave (4-6 minutes) or oven (30-40 minutes at 400°F).
