Scale
  • 5 to 6 cups sliced fresh strawberries

  • 1 (3 oz.) strawberry gelatin

  • 2½ cups graham cracker crumbs

  • 12 tbsp unsalted butter, melted

  • 2 (8 oz.) cream cheese, softened

  • 1 cup confectioners’ sugar

  • 4 cups heavy whipping cream

  • 6 tbsp granulated sugar

  • 2 tsp vanilla extract (divided)

Instructions

  • Mix graham crumbs and butter. Press into a 9×13 pan; reserve some for topping.

  • Beat cream cheese, confectioners’ sugar, and 1 tsp vanilla until smooth.

  • Whip cream with granulated sugar and 1 tsp vanilla until stiff peaks form.

  • Fold whipped cream into cream cheese mixture.

  • Layer half the cream on crust, top with strawberry filling, then remaining cream.

  • Sprinkle with reserved crumbs and chill for at least 4 hours or overnight.

Notes
