Scale
  • 1 fresh pineapple (or 1 can of pineapple rings, drained)
  • 1 cup all-purpose flour
  • 2 large eggs
  • ¼ cup coconut milk
  • 1 cup sweetened shredded coconut
  • ½ teaspoon salt
  • ½ teaspoon vanilla extract
  • ½ teaspoon cinnamon (optional)
  • 2 tablespoons granulated sugar

  • ¼ cup coconut milk
  • 2 tablespoons powdered sugar
  • ½ teaspoon vanilla extract

Instructions

  • Slice and core the pineapple into rings, then pat dry.
  • Set up a breading station with three bowls: flour mixture, egg mixture, and shredded coconut.
  • Dip each ring into the flour, then the egg mixture, and finally coat with shredded coconut.
  • Heat oil in a deep frying pan to 350°F (175°C).
  • Fry the pineapple rings for about 1 minute per side until golden brown.
  • Remove from oil and drain on a paper towel.
  • Make the dipping sauce by mixing cream cheese, coconut milk, powdered sugar, and vanilla extract.
  • Serve warm with dipping sauce and enjoy!

Notes

  • Use fresh pineapple for the best flavor and texture.
  • To make it gluten-free, use almond flour or a gluten-free flour blend.
