- 1 fresh pineapple (or 1 can of pineapple rings, drained)
- 1 cup all-purpose flour
- 2 large eggs
- ¼ cup coconut milk
- 1 cup sweetened shredded coconut
- ½ teaspoon salt
- ½ teaspoon vanilla extract
- ½ teaspoon cinnamon (optional)
- 2 tablespoons granulated sugar
- Vegetable oil (for frying)
For the Coconut Dipping Sauce:
- ½ cup cream cheese, softened
- ¼ cup coconut milk
- 2 tablespoons powdered sugar
- ½ teaspoon vanilla extract
Instructions
- Slice and core the pineapple into rings, then pat dry.
- Set up a breading station with three bowls: flour mixture, egg mixture, and shredded coconut.
- Dip each ring into the flour, then the egg mixture, and finally coat with shredded coconut.
- Heat oil in a deep frying pan to 350°F (175°C).
- Fry the pineapple rings for about 1 minute per side until golden brown.
- Remove from oil and drain on a paper towel.
- Make the dipping sauce by mixing cream cheese, coconut milk, powdered sugar, and vanilla extract.
- Serve warm with dipping sauce and enjoy!

- To make it gluten-free, use almond flour or a gluten-free flour blend.
