Description
A quick and easy one-pan recipe featuring tender garlic butter steak bites and crispy golden potatoes. Ready in under 30 minutes and packed with flavor.
Ingredients

1¼ lb sirloin steak, cut into ½-inch cubes

1 lb Yukon gold potatoes, cubed

¼ cup ghee or butter, divided

1 tbsp olive oil

3 garlic cloves, minced
-
1 tsp dried thyme
-
½ tsp dried oregano
-
Salt and pepper, to taste

Fresh parsley, chopped for garnish
Instructions

Heat a large skillet over medium heat. Add olive oil and half the ghee.

Add potatoes, season with salt, pepper, thyme, oregano, and garlic. Cook 8–10 mins, stirring occasionally. Remove from pan.

Increase heat to medium-high. Add remaining ghee and steak cubes. Sear 2 mins undisturbed, stir, and cook another 2 mins.

Return potatoes to pan, toss to combine, adjust seasoning, garnish with parsley, and serve hot.
Notes
- Don’t overcrowd the skillet—cook in batches if needed.
- For paleo or dairy-free, use ghee instead of butter.
- For added heat, sprinkle in red pepper flakes.
