			- 2 sheets frozen puff pastry dough, thawed
 - One 4-ounce log goat cheese
 - Honey (for drizzling)
 - Chopped fresh thyme (for garnish)
 
Instructions
- Preheat the oven to 400°F and line two baking sheets with parchment paper.
 - Roll out the puff pastry to flatten slightly. Use a 2-inch cookie cutter to cut circles from the dough.
 - Place pastry rounds on the baking sheets and press your thumb into the center of each round to create an indentation.
 - Add about 1 tablespoon of goat cheese into each indentation.
 - Bake for 8–10 minutes until the pastry is golden brown.
 - Drizzle each piece with ½ teaspoon of honey and sprinkle with fresh thyme. Serve warm.
