For the Chicken:
- 3–4 boneless, skinless chicken breasts
- 4 cloves garlic, minced
- 2 large lemons (juiced and zested)
- ¼ cup extra virgin olive oil
- 2 teaspoons dried oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
For the Lemon Rice:
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 1 cup long-grain rice (Jasmine or Basmati)
- 2 cups low-sodium chicken broth
- Zest of 1 lemon
- 2 tablespoons fresh lemon juice
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ cup fresh parsley, chopped (for garnish)
Instructions
- Marinate the Chicken – In a bowl, whisk together olive oil, minced garlic, lemon juice, lemon zest, oregano, salt, and pepper. Pour over the chicken and marinate for at least 30 minutes (or up to 1 hour).
- Cook the Chicken – Heat a grill pan or skillet over medium-high heat. Cook the chicken for 6-7 minutes per side or until golden brown and fully cooked (internal temperature 165°F/75°C). Remove and let rest.
- Prepare the Rice – In a medium pot, heat 1 tablespoon olive oil over medium heat. Sauté the onions for 3-4 minutes until soft. Add the rice and stir for 1 minute to coat with oil.
- Cook the Rice – Pour in the chicken broth, lemon zest, lemon juice, salt, and pepper. Bring to a boil, then cover and simmer for 15-20 minutes until the rice is tender and fluffy.
- Serve and Garnish – Fluff the rice with a fork and serve alongside sliced chicken. Garnish with fresh parsley and lemon wedges. Enjoy!
