Description

This Greek Chicken Marinade is a vibrant, zesty blend of lemon, garlic, olive oil, and herbs that turns simple chicken into a Mediterranean masterpiece. It’s quick to prep, easy to cook, and perfect for grilling, baking, or meal prepping ahead.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts

  • 1/4 cup olive oil

  • Juice of 2 lemons

  • Zest of 1 lemon

  • 3 cloves garlic, minced

  • 1 tsp dried oregano

  • 1 tsp dried thyme

  • 1 tsp salt

  • 1/2 tsp black pepper


Instructions

  • In a bowl, whisk together olive oil, lemon juice, zest, garlic, oregano, thyme, salt, and pepper.

  • Pour over chicken in a zip-top bag or dish, coat evenly, and marinate in the fridge for at least 2 hours or overnight.

  • Preheat grill or oven. Grill chicken 6–8 minutes per side, or bake at 400°F for 20–25 minutes until internal temp reaches 165°F.

  • Rest chicken for 5 minutes, then garnish with parsley and grilled lemon slices.

Notes

  • For extra flavor, marinate overnight.
  • Can substitute with chicken thighs, tofu, or even grilled veggies.
