Description

A quick and refreshing Mediterranean salsa made with fresh tomatoes, cucumbers, olives, feta, and herbs. Perfect as a dip, salad, or topping.


Ingredients

Scale
  • 2 medium tomatoes, diced

  • 1 large cucumber, peeled and diced

  • ½ small red onion, finely chopped

  • ⅓ cup Kalamata olives, pitted and sliced

  • ½ cup feta cheese, crumbled

  • 2 tbsp extra virgin olive oil

  • 1 tbsp red wine vinegar or lemon juice

  • 2 tbsp fresh parsley or oregano, chopped

  • Salt and pepper, to taste


Instructions

  • Dice tomatoes, cucumber, and onion.

  • Slice olives and crumble feta.

  • Mix vegetables, olives, and feta in a bowl.

  • Whisk olive oil and vinegar or lemon juice; pour over the mixture.

  • Add herbs, season with salt and pepper.

  • Chill for 30 minutes before serving

Notes

  • For best flavor, let it chill for at least 30 minutes.
  • Use block feta for better texture and taste.
  • Optional: Add lemon zest or crushed red pepper for a twist.
