Description
A quick and refreshing Mediterranean salsa made with fresh tomatoes, cucumbers, olives, feta, and herbs. Perfect as a dip, salad, or topping.
Ingredients

2 medium tomatoes, diced

1 large cucumber, peeled and diced

½ small red onion, finely chopped

⅓ cup Kalamata olives, pitted and sliced

½ cup feta cheese, crumbled

2 tbsp extra virgin olive oil

1 tbsp red wine vinegar or lemon juice

2 tbsp fresh parsley or oregano, chopped

Salt and pepper, to taste
Instructions

Dice tomatoes, cucumber, and onion.

Slice olives and crumble feta.

Mix vegetables, olives, and feta in a bowl.

Whisk olive oil and vinegar or lemon juice; pour over the mixture.

Add herbs, season with salt and pepper.

Chill for 30 minutes before serving

- For best flavor, let it chill for at least 30 minutes.
- Use block feta for better texture and taste.
- Optional: Add lemon zest or crushed red pepper for a twist.
