Ingredients

  • 1 lb ground turkey
  • 2 cups diced sweet potatoes
  • 1 can black beans, drained and rinsed
  • 1 tsp kosher salt
  • 1 tsp chipotle chili powder
  • 1 tsp cumin
  • 1 cup shredded cheddar cheese
  • 3 green onions, sliced
  • 1 tomato, diced
  • ⅓ cup sour cream (or Greek yogurt)
  • ⅓ cup salsa

Instructions

  • Pre-cook sweet potatoes in the microwave for 5 minutes.
  • Prepare the sauce by mixing sour cream and salsa.
  • Cook the ground turkey in a large skillet over medium-high heat until mostly cooked.
  • Add sweet potatoes, black beans, and spices to the skillet. Cook for another 5 minutes until everything is tender.
  • Melt cheese on top and remove from heat.
  • Garnish with green onions, diced tomatoes, and drizzle with the sauce before serving.
