A cheesy, creamy, and savory baked casserole made with ground beef, hash browns, and melty cheddar. Perfect for weeknight dinners or meal prep.
Ingredients

2 lb ground beef

1 medium onion, chopped

32 oz shredded hash browns, thawed

2 cans cream of mushroom or chicken soup

½ cup milk
-
2 cups shredded cheddar cheese, divided

½ tsp pepper

Optional: peas, mixed vegetables, garlic powder, smoked paprika, sour cream
Instructions

Preheat oven to 375°F (190°C).

Cook beef and onion in a skillet until browned. Drain grease.

In a large bowl, mix beef, hash browns, soup, milk, 1½ cups cheese, pepper, and any optional ingredients.

Spread mixture into a greased 9×13” baking dish.

Top with remaining cheese.

Bake for 45–55 minutes, until golden and bubbly.

Let rest 5–10 minutes before serving.
Notes
- Be sure to thaw and pat hash browns dry.
- Freshly shredded cheese melts better than pre-shredded.
- Tent with foil if cheese browns too fast.
