Description

A cheesy, creamy, and savory baked casserole made with ground beef, hash browns, and melty cheddar. Perfect for weeknight dinners or meal prep.


Ingredients

  • 2 lb ground beef

  • 1 medium onion, chopped

  • 32 oz shredded hash browns, thawed

  • 2 cans cream of mushroom or chicken soup

  • ½ cup milk

  • 2 cups shredded cheddar cheese, divided

  • ½ tsp pepper

  • Optional: peas, mixed vegetables, garlic powder, smoked paprika, sour cream


Instructions

  • Preheat oven to 375°F (190°C).

  • Cook beef and onion in a skillet until browned. Drain grease.

  • In a large bowl, mix beef, hash browns, soup, milk, 1½ cups cheese, pepper, and any optional ingredients.

  • Spread mixture into a greased 9×13” baking dish.

  • Top with remaining cheese.

  • Bake for 45–55 minutes, until golden and bubbly.

  • Let rest 5–10 minutes before serving.

Notes

  • Be sure to thaw and pat hash browns dry.
  • Freshly shredded cheese melts better than pre-shredded.
  • Tent with foil if cheese browns too fast.
