Description

This hash brown quiche is a hearty and comforting breakfast or brunch dish made with a crispy shredded potato crust, fluffy eggs, ham, cheese, and green onions. Easy to prep, family-friendly, and customizable.


Ingredients

  • 3 cups frozen shredded hash browns, thawed and drained

  • 2 tbsp butter, cold and cubed

  • 3 large eggs, beaten

  • 1 cup 1% milk (lactose-free optional)

  • ¾ cup diced cooked ham

  • ½ cup diced green onions

  • ½ cup reduced-fat cheddar cheese

  • Salt and black pepper, to taste


Instructions

  • Preheat oven to 450°F.

  • Mix thawed, dry hash browns with butter and press into a greased 9-inch pie dish.

  • Bake crust for 20–25 minutes until golden and crispy.

  • Lower oven to 350°F.

  • In a bowl, whisk eggs, milk, ham, onions, cheese, salt, and pepper.

  • Pour filling into crust and bake 30 minutes or until set and golden.

  • Let rest for 5–10 minutes before slicing.

Notes

  • Be sure to dry hash browns thoroughly.
  • You can substitute ham with turkey bacon, sausage, or vegetables.
  • Store leftovers in the fridge for up to 3 days or freeze for up to 3 months.
