Description

These Healthy Greek Chicken Bowls are loaded with juicy, lemon-garlic marinated chicken, crisp veggies, and creamy homemade tzatziki, all served over a base of rice, quinoa, or greens. This Mediterranean-inspired dish is easy, meal-prep friendly, and packed with protein, making it a perfect weeknight dinner or grab-and-go lunch.


Ingredients

  • For the Chicken Marinade: 2 boneless skinless chicken breasts, olive oil, lemon juice, honey, dried oregano, dried basil, garlic powder, salt, black pepper, red pepper flakes
  • For the Tzatziki Sauce: Greek yogurt, grated cucumber, garlic, fresh dill, lemon juice, olive oil, salt
  • For the Bowl Base and Toppings: Cooked white or brown rice (or quinoa), romaine lettuce, cherry tomatoes, cucumber, red onion, crumbled feta cheese (optional), kalamata olives (optional)

Instructions

  • Marinate the Chicken – Combine all marinade ingredients, coat chicken, and marinate for at least 30 minutes.
  • Prepare Tzatziki Sauce – Mix yogurt, grated cucumber, garlic, dill, lemon juice, and olive oil. Refrigerate for 30 minutes.
  • Cook the Chicken – Grill, pan-sear, or air fry the chicken until fully cooked (165°F internal temp).
  • Assemble Bowls – Layer rice, veggies, and sliced chicken. Drizzle with tzatziki and add toppings. Serve fresh!
