Ingredients
- For the Chicken Marinade: 2 boneless skinless chicken breasts, olive oil, lemon juice, honey, dried oregano, dried basil, garlic powder, salt, black pepper, red pepper flakes
- For the Tzatziki Sauce: Greek yogurt, grated cucumber, garlic, fresh dill, lemon juice, olive oil, salt
- For the Bowl Base and Toppings: Cooked white or brown rice (or quinoa), romaine lettuce, cherry tomatoes, cucumber, red onion, crumbled feta cheese (optional), kalamata olives (optional)
Instructions
- Marinate the Chicken – Combine all marinade ingredients, coat chicken, and marinate for at least 30 minutes.
- Prepare Tzatziki Sauce – Mix yogurt, grated cucumber, garlic, dill, lemon juice, and olive oil. Refrigerate for 30 minutes.
