  • 1 lb ground beef (lean preferred)
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 1 can (10.75 oz) cream of mushroom soup
  • ½ cup milk
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 cup frozen corn
  • 1 tsp chili powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 4 cups potatoes, thinly sliced (about 1.5 lbs)
  • 1 cup shredded cheddar cheese

Instructions

  • In a skillet, cook ground beef with onion and garlic until beef is browned and onions are translucent. Drain fat.
  • Transfer beef mixture to slow cooker. Stir in cream of mushroom soup, milk, kidney beans, tomatoes, corn, chili powder, salt, and pepper.
  • Layer sliced potatoes over the mixture, ensuring they are evenly coated.
  • Cover and cook on Low for 6–7 hours or High for 3–4 hours, until potatoes are tender.
  • Sprinkle shredded cheese on top in the last 20 minutes of cooking. Let melt before serving.

Notes

  • Substitute ground turkey or chicken for a lighter version.
  • Use pinto or black beans instead of kidney beans for variety.
