			- 1 lb ground beef (lean preferred)
 - 1 medium onion, chopped
 - 3 garlic cloves, minced
 - 1 can (10.75 oz) cream of mushroom soup
 - ½ cup milk
 - 1 can (15 oz) kidney beans, drained and rinsed
 - 1 can (14.5 oz) diced tomatoes with green chilies
 - 1 cup frozen corn
 - 1 tsp chili powder
 - ½ tsp salt
 - ¼ tsp black pepper
 - 4 cups potatoes, thinly sliced (about 1.5 lbs)
 - 1 cup shredded cheddar cheese
 
Instructions
- In a skillet, cook ground beef with onion and garlic until beef is browned and onions are translucent. Drain fat.
 - Transfer beef mixture to slow cooker. Stir in cream of mushroom soup, milk, kidney beans, tomatoes, corn, chili powder, salt, and pepper.
 - Layer sliced potatoes over the mixture, ensuring they are evenly coated.
 - Cover and cook on Low for 6–7 hours or High for 3–4 hours, until potatoes are tender.
 - Sprinkle shredded cheese on top in the last 20 minutes of cooking. Let melt before serving.

- Substitute ground turkey or chicken for a lighter version.
 - Use pinto or black beans instead of kidney beans for variety.
