Description

This cozy Hobo Casserole features layers of thinly sliced potatoes, seasoned ground beef, sautéed onions, and melty cheese baked to golden perfection.


Ingredients

  • 1 lb ground beef

  • 45 medium potatoes, thinly sliced

  • 1 medium onion, chopped

  • 2 cloves garlic, minced

  • 1½ cups shredded cheddar cheese

  • ½ cup grated Parmesan cheese

  • ½ cup beef broth or water

  • 1 tbsp olive oil

  • 1 tsp Italian seasoning

  • ½ tsp paprika

  • Salt & pepper to taste

  • Optional: ¼ cup milk, fresh parsley for garnish


Instructions

  • Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.

  • Brown ground beef in olive oil for 5–7 minutes. Drain fat.

  • Add chopped onion and garlic; sauté until soft.

  • Spread beef in baking dish. Top with potato slices.

  • Season with salt, pepper, Italian seasoning, and paprika.

  • Sprinkle cheddar and Parmesan cheese on top.

  • Pour broth around the edges. Drizzle milk if using.

  • Cover with foil and bake for 30 minutes.

  • Remove foil and bake another 15–20 minutes until bubbly and golden.

  • Let rest for 5–10 minutes, garnish with parsley, and serve.

  • Slice potatoes thin for even cooking.
  • Customize with veggies like spinach or bell peppers.
