- ½ tsp cayenne pepper (optional)
- 1 large egg
- 2 tbsp water
- ½ cup buttermilk
- Vegetable oil (for frying)
For the Buttermilk Biscuits:
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1 tsp kosher salt
- ¼ tsp baking soda
- ½ cup cold butter, cubed
- ¾ cup buttermilk
- ¼ cup melted butter (for brushing)
For the Hot Honey:
- 1 cup honey
- 2 tsp crushed red pepper flakes
- 1 tbsp apple cider vinegar

Instructions
- Prepare the Chicken: Whisk buttermilk, egg, and water in a bowl. In another bowl, mix flour, salt, black pepper, garlic powder, smoked paprika, and cayenne. Dip chicken in flour, then buttermilk mixture, then flour again.
- Fry the Chicken: Heat oil to 365-375°F and fry chicken for 8-10 minutes, turning once, until golden brown. Drain on a wire rack.
- Make the Biscuits: Preheat oven to 450°F. Mix flour, baking powder, salt, and baking soda. Cut in butter until crumbly, then stir in buttermilk. Roll out, fold three times, cut biscuits, and bake for 15-17 minutes. Brush with melted butter.
- Make the Hot Honey: Simmer honey and red pepper flakes for 3 minutes, remove from heat, and stir in apple cider vinegar. Let cool.
- Assemble: Split biscuits, add fried chicken, drizzle with hot honey, and top with pickles or cheese if desired.

- Use cold butter for flaky biscuits.
- Adjust spice level in the honey by adding more or fewer red pepper flakes.
- For a healthier option, bake the chicken at 400°F for 20-25 minutes instead of frying.
