  • 3 lbs Boneless Leg of Lamb

  • 6 tbsp Canola Oil (or olive/avocado oil for healthier option)

  • ½ tsp Greek Oregano

  • 1 tsp Kosher Salt

  • 1 cup Water (for Instant Pot)


Instructions

  • Prepare Lamb: Rub the lamb with 2 tbsp canola oil. Season with Greek oregano and kosher salt.
  • Sear the Lamb: Heat remaining oil in a frying pan. Sear lamb for 4–5 minutes per side until browned.
  • Set Up Instant Pot: Pour 1 cup of water into the Instant Pot. Place the trivet and the lamb on top.
  • Cook: Secure lid, set valve to Sealing, and pressure cook on Manual for 70 minutes.
  • Natural Release: Allow natural release for 15–20 minutes.
  • Rest & Serve: Remove lamb, let it rest for 15 minutes, slice, and serve.

Notes

  • For extra crispiness, broil the lamb for 2–3 minutes after cooking.
  • Use olive oil or avocado oil instead of canola oil for better health benefits.
