Instructions
- Prepare Lamb: Rub the lamb with 2 tbsp canola oil. Season with Greek oregano and kosher salt.
- Sear the Lamb: Heat remaining oil in a frying pan. Sear lamb for 4–5 minutes per side until browned.
- Set Up Instant Pot: Pour 1 cup of water into the Instant Pot. Place the trivet and the lamb on top.
- Cook: Secure lid, set valve to Sealing, and pressure cook on Manual for 70 minutes.
- Natural Release: Allow natural release for 15–20 minutes.
- Rest & Serve: Remove lamb, let it rest for 15 minutes, slice, and serve.
