A flavorful and spicy Jamaican curry chicken recipe made with tender chicken simmered in a rich, coconut-based curry sauce infused with bold Caribbean spices.

- 2 lbs chicken (thighs, drumsticks)
- 2 tbsp Jamaican curry powder
- 1 tbsp olive oil
- 1 tbsp brown sugar
- 1 onion, chopped
- 3 cloves garlic, minced
- 1-inch ginger, grated
- 1–2 scotch bonnet peppers, chopped
- 2 scallions, chopped
- 1 bell pepper, diced
- 1 sprig thyme
- 1 cup coconut milk
- 1 cup chicken stock
- 1 tsp allspice
- 1 large potato, diced
- 1 carrot, sliced
Instructions
- Season chicken with curry powder, salt, and pepper. Marinate for at least 3 hours.
- Heat oil in a pot, add brown sugar, and caramelize.
- Sear the chicken on both sides, then set aside.
- Sauté onions, garlic, ginger, peppers, and thyme.
- Add coconut milk, chicken stock, and allspice.
- Return chicken to the pot, add potatoes and carrots, and simmer for 25-30 minutes.
- Serve hot with rice or roti.
Notes
- Adjust spice by using fewer scotch bonnet peppers.
- Toast curry powder before cooking to enhance flavor.
- Use bone-in chicken for extra depth.
