Description

A flavorful and spicy Jamaican curry chicken recipe made with tender chicken simmered in a rich, coconut-based curry sauce infused with bold Caribbean spices.


Ingredients

  • 2 lbs chicken (thighs, drumsticks)
  • 2 tbsp Jamaican curry powder
  • 1 tbsp olive oil
  • 1 tbsp brown sugar
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1-inch ginger, grated
  • 12 scotch bonnet peppers, chopped
  • 2 scallions, chopped
  • 1 bell pepper, diced
  • 1 sprig thyme
  • 1 cup coconut milk
  • 1 cup chicken stock
  • 1 tsp allspice
  • 1 large potato, diced
  • 1 carrot, sliced

Instructions

  • Season chicken with curry powder, salt, and pepper. Marinate for at least 3 hours.
  • Heat oil in a pot, add brown sugar, and caramelize.
  • Sear the chicken on both sides, then set aside.
  • Sauté onions, garlic, ginger, peppers, and thyme.
  • Add coconut milk, chicken stock, and allspice.
  • Return chicken to the pot, add potatoes and carrots, and simmer for 25-30 minutes.
  • Serve hot with rice or roti.

Notes

  • Adjust spice by using fewer scotch bonnet peppers.
  • Toast curry powder before cooking to enhance flavor.
  • Use bone-in chicken for extra depth.
