    • 12 oz fresh blueberries
    • 1 tbsp lemon juice
    • 1/4 cup granulated sugar
    • 1 tsp vanilla extract
    • 1/2 tbsp cornstarch
  • For the Cookie Dough:
    • 1 cup unsalted butter, softened
    • 1 1/4 cups granulated sugar
    • 1 large egg, room temperature
    • 1 tbsp vanilla extract
    • 2 1/2 cups all-purpose flour
    • 1/2 tsp baking powder
    • 1/2 tsp salt

Instructions

  • Prepare the Blueberry Jam:
    • Combine all jam ingredients in a saucepan. Cook over medium heat, stirring occasionally, until thickened (30-40 minutes). Cool completely.
  • Prepare the Cookie Dough:
    • Whisk flour, baking powder, and salt in one bowl.
    • In another bowl, cream butter and sugar until fluffy. Add the egg and vanilla extract, mixing well. Gradually combine wet and dry mixtures.
  • Incorporate the Jam:
    • Gently fold the cooled jam into the dough to create swirls.
  • Bake:
    • Preheat oven to 350°F (175°C). Scoop dough onto parchment-lined baking sheets. Bake for 10-12 minutes until edges are set.

Notes

  • Cool the jam completely before using.
  • Add a sprinkle of sugar on top for extra crunch.
