- 1 1/4 cups granulated sugar
- 1 large egg, room temperature
- 1 tbsp vanilla extract
- 2 1/2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp salt
Instructions
- Prepare the Blueberry Jam:
- Combine all jam ingredients in a saucepan. Cook over medium heat, stirring occasionally, until thickened (30-40 minutes). Cool completely.
- Prepare the Cookie Dough:
- Whisk flour, baking powder, and salt in one bowl.
- In another bowl, cream butter and sugar until fluffy. Add the egg and vanilla extract, mixing well. Gradually combine wet and dry mixtures.
- Incorporate the Jam:
- Gently fold the cooled jam into the dough to create swirls.
- Bake:
- Preheat oven to 350°F (175°C). Scoop dough onto parchment-lined baking sheets. Bake for 10-12 minutes until edges are set.
Notes
- Cool the jam completely before using.
- Add a sprinkle of sugar on top for extra crunch.
