Description

This Keto Beef Burrito Skillet is a quick, one-pan meal packed with flavorful ground beef, cauliflower rice, and melty cheese. A perfect low-carb, high-protein dinner that comes together in just 35 minutes.


Ingredients

  • 1 lb ground beef
  • ½ onion, chopped
  • ½ red bell pepper, chopped
  • ½ green bell pepper, chopped
  • 2 tsp minced garlic
  • 2 tsp chili powder
  • 2 tsp cumin
  • 1 tsp paprika
  • Cayenne pepper (to taste)
  • Salt & black pepper (to taste)
  • 1 ½ cups cauliflower rice
  • ½ cup Rotel tomatoes, drained
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 5 zero-carb tortillas, cut into strips (optional)

Instructions

  • Heat a large skillet over medium-high heat. Brown the ground beef, breaking it apart as it cooks. Drain excess grease.
  • Add onion, red bell pepper, and green bell pepper. Sauté until softened.
  • Stir in garlic, chili powder, cumin, paprika, cayenne, salt, and black pepper. Cook for 1 minute.
  • Mix in cauliflower rice and Rotel tomatoes. Cook for 2–3 minutes.
  • Add optional tortilla strips and sprinkle with shredded cheese. Let the cheese melt before serving.

Notes

  • Adjust spice levels by adding more or less cayenne.
  • Substitute ground beef with chicken or turkey for variety.
  • Store leftovers in the fridge for up to 4 days or freeze for 2 months.
