This Keto Beef Burrito Skillet is a quick, one-pan meal packed with flavorful ground beef, cauliflower rice, and melty cheese. A perfect low-carb, high-protein dinner that comes together in just 35 minutes.

- 1 lb ground beef
- ½ onion, chopped
- ½ red bell pepper, chopped
- ½ green bell pepper, chopped
- 2 tsp minced garlic
- 2 tsp chili powder
- 2 tsp cumin
- 1 tsp paprika
- Cayenne pepper (to taste)
- Salt & black pepper (to taste)
- 1 ½ cups cauliflower rice
- ½ cup Rotel tomatoes, drained
- 1 cup shredded cheese (cheddar or Mexican blend)
- 5 zero-carb tortillas, cut into strips (optional)
Instructions
- Heat a large skillet over medium-high heat. Brown the ground beef, breaking it apart as it cooks. Drain excess grease.
- Add onion, red bell pepper, and green bell pepper. Sauté until softened.
- Stir in garlic, chili powder, cumin, paprika, cayenne, salt, and black pepper. Cook for 1 minute.
- Mix in cauliflower rice and Rotel tomatoes. Cook for 2–3 minutes.
- Add optional tortilla strips and sprinkle with shredded cheese. Let the cheese melt before serving.
Notes
- Adjust spice levels by adding more or less cayenne.
- Substitute ground beef with chicken or turkey for variety.
- Store leftovers in the fridge for up to 4 days or freeze for 2 months.
