Description
This festive salad is a showstopper with its vibrant layers of pasta, veggies, turkey bacon, and creamy mustard dressing. Perfect for holiday tables and potlucks.
Ingredients

3 cups elbow pasta
 - 
2 tsp olive oil
 - 
4 slices turkey bacon, chopped
 - 
½ small red cabbage, chopped
 - 
1 can (420g) corn kernels, drained
 - 
2 baby gem lettuces, shredded
 - 
2 large tomatoes, diced
 - 
1 cucumber, diced
 - 
¾ cup grated cheddar cheese
 - 
2 green onions, sliced
 - 
Dressing:
- 
1 cup sour cream
 - 
1 cup mayonnaise
 - 
1 cup parsley, chopped
 - 
2 tbsp lemon juice
 - 
1 tbsp wholegrain mustard
 - 
Salt and pepper to taste

Instructions
- 
Cook pasta until al dente, rinse under cold water.
 - 
Sauté turkey bacon until crispy, set aside.
 - 
Mix dressing ingredients and chill.
 - 
Layer salad: cabbage, corn, half pasta, dressing, lettuce, tomato + cucumber + pasta mix, top with more dressing, cheese, bacon, green onions.
 - 
Chill for 1 hour before serving.
