Description

This Lazy Carrot Cake is a super easy, moist, and flavorful dessert that requires minimal ingredients. Made with a boxed carrot cake mix, butter, and eggs, it delivers classic flavors without the hassle of grating fresh carrots. Topped with a light homemade whipped cream frosting, this cake is perfect for any occasion.

  • 1 box carrot cake mix
  • ½ cup butter (room temperature)
  • 2 eggs
For the Whipped Cream Frosting:
  • 2 cups heavy cream
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  • Preheat oven to 350°F (175°C) and grease an 8×8-inch or 9-inch baking dish.
  • In a bowl, mix carrot cake mix, butter, and eggs until smooth.
  • Pour batter into the prepared baking dish and spread evenly.
  • Bake for 35 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the cake cool for 20 minutes before frosting.
  • To make the frosting, chill a mixing bowl and whisk for 10 minutes. Whisk heavy cream until thick, then add powdered sugar and vanilla extract. Whisk until stiff peaks form.
  • Spread frosting over the cooled cake, garnish as desired, and serve.
