Description

These homemade lemon bars have a buttery shortbread crust and a bright, tangy lemon filling, finished with a dusting of powdered sugar. They are the perfect combination of sweet and tart, making them an irresistible treat for any occasion.

For the Crust:

  • ½ cup unsalted butter, cold and cubed
  • 1 cup all-purpose flour
  • ¼ cup powdered sugar

For the Lemon Filling:

  • 1 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • ½ teaspoon baking powder
  • 2 large eggs
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest

For the Topping:

  • ¾ cup powdered sugar
  • 1 tablespoon fresh lemon juice
  • Extra powdered sugar for dusting

Instructions

  • Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper.
  • Make the crust: Combine cold butter, flour, and powdered sugar. Mix until crumbly, then press into the pan. Bake for 15 minutes until golden.
  • Prepare the filling: Whisk sugar, flour, and baking powder. Add eggs, lemon juice, and zest. Mix until smooth.
  • Bake: Pour filling over the hot crust. Bake for another 20 minutes until set.
  • Add glaze: Mix powdered sugar and lemon juice, drizzle over warm bars.
  • Chill & serve: Cool completely, refrigerate for at least 2 hours, then slice and dust with powdered sugar before serving.
