For the Crust:
- ½ cup unsalted butter, cold and cubed
- 1 cup all-purpose flour
- ¼ cup powdered sugar
For the Lemon Filling:
- 1 cup granulated sugar
- 2 tablespoons all-purpose flour
- ½ teaspoon baking powder
- 2 large eggs
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
For the Topping:
- ¾ cup powdered sugar
- 1 tablespoon fresh lemon juice
- Extra powdered sugar for dusting
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper.
- Make the crust: Combine cold butter, flour, and powdered sugar. Mix until crumbly, then press into the pan. Bake for 15 minutes until golden.
- Prepare the filling: Whisk sugar, flour, and baking powder. Add eggs, lemon juice, and zest. Mix until smooth.
- Bake: Pour filling over the hot crust. Bake for another 20 minutes until set.
- Add glaze: Mix powdered sugar and lemon juice, drizzle over warm bars.
- Chill & serve: Cool completely, refrigerate for at least 2 hours, then slice and dust with powdered sugar before serving.
