  • 1.1 lbs (500g) cheese ravioli
  • 3 oz (85g) unsalted butter
  • ¼ cup fresh lemon juice
  • Zest of 1 lemon
  • 1 oz (30g) Parmesan cheese, finely grated
  • 2 cloves garlic, grated or minced
  • 7 oz (200g) asparagus, trimmed and cut into small pieces
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon dried thyme
  • ¼ teaspoon red pepper flakes (optional)
  • ½ cup reserved pasta water

Instructions

  • Prep the Ingredients: Grate garlic and Parmesan, trim asparagus, zest and juice the lemon.
  • Cook the Sauce: Melt butter in a skillet over low heat. Add garlic and sauté for 1 minute. Stir in salt, black pepper, thyme, and lemon juice.
  • Add the Asparagus: Cook for 3-5 minutes until tender but crisp.
  • Cook the Ravioli: Boil salted water, cook ravioli for 3-4 minutes, and reserve ½ cup of pasta water.
  • Combine Everything: Add pasta water to the asparagus mixture, stir for 1 minute, then add Parmesan. Toss in cooked ravioli and coat in sauce.
  • Garnish & Serve: Top with extra Parmesan, lemon zest, and red pepper flakes.

Notes

  • Use fresh ravioli for best texture. If using frozen, adjust cooking time accordingly.
  • For extra creaminess, stir in 1-2 tablespoons of heavy cream before serving.
  • Customize with protein by adding grilled chicken, shrimp, or crispy turkey bacon.
  • Balance flavors by adjusting the lemon juice and Parmesan to your preference.
