Ingredients

Salt for boiling water

1 cup ricotta cheese

Zest and juice of 1 large lemon

½ teaspoon garlic powder

Instructions

Bring a large pot of salted water to a boil.

Cook pasta until al dente; reserve 1 cup of pasta water before draining.

In a large bowl, mix ricotta, olive oil, lemon zest, lemon juice, garlic powder, salt, and pepper.

Toss hot pasta with the ricotta sauce, adding reserved pasta water as needed to create a silky sauce.
