Ingredients

  • Salt for boiling water

  • Zest and juice of 1 large lemon

Instructions

  • Bring a large pot of salted water to a boil.

  • Cook pasta until al dente; reserve 1 cup of pasta water before draining.

  • In a large bowl, mix ricotta, olive oil, lemon zest, lemon juice, garlic powder, salt, and pepper.

  • Toss hot pasta with the ricotta sauce, adding reserved pasta water as needed to create a silky sauce.

  • Garnish with fresh herbs and serve immediately.
