Description

These crispy and cheesy Loaded Mashed Potato Egg Rolls are the perfect way to use up leftover mashed potatoes! They’re filled with creamy potatoes, melted cheddar cheese, turkey bacon, and green onions, then fried to golden perfection. Great for snacks, appetizers, or party food!


Ingredients

  • 2 cups mashed potatoes (leftover or fresh)
  • ¼ cup turkey bacon bits or crumbled cooked turkey bacon
  • 2 green onions, finely chopped
  • 1 large egg
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and black pepper to taste
  • 8 ounces cheddar cheese, cut into sticks (3-inch x ¼-inch)
  • 8 to 10 egg roll wrappers
  • Water, for sealing
  • Vegetable oil, for frying

Instructions

  • In a bowl, mix mashed potatoes, turkey bacon, green onions, egg, garlic powder, onion powder, salt, and pepper.
  • Place a cheese stick in the center of about 3 tablespoons of the mashed potato mixture.
  • Lay an egg roll wrapper flat, place the filling in the center, fold in the sides, and roll tightly. Use water to seal the edges.
  • Heat oil to 350°F (175°C). Fry the egg rolls for 4-5 minutes or until golden brown.
  • Drain on a paper towel and serve warm with sour cream or your favorite dip.

Notes

  • Air Fryer Option: Brush lightly with oil and air fry at 375°F (190°C) for 8-10 minutes, flipping halfway.
  • Make-Ahead: Freeze assembled egg rolls and fry them straight from frozen when ready.
  • Best Dips: Sour cream, spicy mayo, ranch dressing, or honey mustard.
