Description

These Make Ahead Breakfast Sandwiches are a lifesaver for busy mornings! Made with fluffy eggs, melty cheese, savory ham, and buttery croissants, they’re easy to prepare, store, and reheat. Perfect for meal prep, brunches, or grab-and-go breakfasts.

Ingredients

Scale
  • 14 large eggs

  • 2 tablespoons milk

  • 1/4 teaspoon seasoned salt

  • Salt and pepper (to taste)

  • 12 small croissant rolls (mini version recommended)

  • 6 ounces sharp cheddar cheese slices

  • 9 ounces deli ham

Instructions

  • Preheat oven to 400°F (200°C).

  • Whisk eggs, milk, seasoned salt, salt, and pepper in a large bowl until frothy.

  • Spray a 9×13-inch baking dish with cooking spray, pour in the egg mixture, and bake for 15 minutes.

  • Let eggs cool for 5 minutes, then cut into 12 rectangles.

  • Assemble sandwiches: croissant bottom, egg, ham, cheese, then croissant top.

  • Store sandwiches in a greased 9×13-inch dish, cover tightly, and refrigerate or freeze.

  • To reheat, bake at 400°F for 15 minutes (20-25 minutes if frozen).

Notes

  • For a vegetarian version, skip the ham and add sautéed vegetables.
  • Swap croissants with English muffins for a healthier option.
  • Store sandwiches in the fridge for up to 3 days or freeze for up to 3 months.
