Description

A sweet and savory side dish featuring roasted carrots wrapped in crispy bacon and glazed with maple syrup. Perfect for holidays and everyday meals.


Ingredients

  • 2 lbs carrots, peeled
  • 1 lb thin-sliced bacon
  • ¼ cup pure maple syrup
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder (optional)
  • ¼ tsp red pepper flakes (optional)

Instructions

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and place a wire rack on top.
  • Wash, peel, and trim the carrots. Cut larger carrots in half lengthwise for even cooking.
  • Wrap each carrot with a slice of bacon, slightly overlapping the edges to secure. Use toothpicks if needed.
  • Arrange wrapped carrots on the wire rack, spacing them apart for even cooking.
  • Bake for 25 minutes, rotating halfway for even crisping.
  • Brush with maple syrup and bake for another 8-10 minutes until caramelized.
  • Let rest for 5 minutes before serving. Enjoy warm!

Notes

  • For extra crispy bacon, broil for the last 1-2 minutes.
  • Use turkey bacon for a leaner option.
  • Air fryer method: Cook at 385°F (195°C) for 10 minutes, brush with syrup, and cook for another 6-8 minutes.
