  • 1 tbsp olive oil
  • ½ cup onion, finely chopped
  • 34 garlic cloves, minced
  • 1 tbsp butter
  • 1 lb chicken breasts, cut into bite-sized pieces
  • ½ tsp Italian seasoning
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp red pepper flakes (optional)
  • ½ tsp salt and pepper
  • 1 cup heavy cream
  • ½ cup Parmesan cheese, grated
  • ½ cup sun-dried tomatoes, chopped
  • Fresh basil leaves (optional for garnish)

Instructions

  • Boil pasta until al dente, reserving ½ cup of pasta water. Drain and set aside.
  • Heat olive oil in a skillet, sauté onions for 2–3 minutes. Add garlic and butter, cooking for 30 seconds.
  • Add chicken, season with spices, and cook until golden and cooked through (3–5 minutes).
  • Stir in heavy cream, Parmesan cheese, pasta water, and sun-dried tomatoes. Let simmer for 3–4 minutes.
  • Toss in pasta, garnish with basil, and serve hot.

Notes

  • For extra flavor, toast the sun-dried tomatoes before adding them to the sauce.
  • To lighten the recipe, substitute heavy cream with half-and-half.
