Description

Ingredients

  • 2 tbsp olive oil
  • 1 lb boneless, skinless chicken breasts or thighs, cubed
  • 1 tsp Italian seasoning
  • 1 small onion, diced
  • 2 carrots, peeled and diced
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • ½ cup sundried tomatoes, chopped
  • 2 tbsp all-purpose flour
  • 6 cups chicken broth
  • 1 cup uncooked pasta (ditalini, cavatappi, or small penne)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 cups fresh spinach, roughly chopped

Instructions

  • Heat olive oil in a large pot over medium-high heat. Add chicken, season with Italian seasoning, and cook until browned. Remove and set aside.
  • In the same pot, sauté onions, carrots, celery, garlic, and sundried tomatoes until softened.
  • Sprinkle flour over the vegetables and stir well. Cook for 1 minute.
  • Gradually pour in the chicken broth while stirring. Bring to a boil.
  • Add pasta, salt, and pepper. Reduce heat and let simmer for 15–20 minutes.
  • Stir in heavy cream, Parmesan, spinach, and the cooked chicken. Let simmer for 5 more minutes.
  • Serve hot with extra Parmesan and fresh basil.

Notes

  • Cook pasta separately if storing leftovers to prevent it from getting mushy.
  • Use coconut milk instead of heavy cream for a dairy-free option.
  • Add red pepper flakes for extra spice.
