- 2 tbsp olive oil
- 1 lb boneless, skinless chicken breasts or thighs, cubed
- 1 tsp Italian seasoning
- 1 small onion, diced
- 2 carrots, peeled and diced
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- ½ cup sundried tomatoes, chopped
- 2 tbsp all-purpose flour
- 6 cups chicken broth
- 1 cup uncooked pasta (ditalini, cavatappi, or small penne)
- 1 tsp salt
- ½ tsp black pepper
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 2 cups fresh spinach, roughly chopped
Instructions
- Heat olive oil in a large pot over medium-high heat. Add chicken, season with Italian seasoning, and cook until browned. Remove and set aside.
- In the same pot, sauté onions, carrots, celery, garlic, and sundried tomatoes until softened.
- Sprinkle flour over the vegetables and stir well. Cook for 1 minute.
- Gradually pour in the chicken broth while stirring. Bring to a boil.
- Add pasta, salt, and pepper. Reduce heat and let simmer for 15–20 minutes.
- Stir in heavy cream, Parmesan, spinach, and the cooked chicken. Let simmer for 5 more minutes.
- Serve hot with extra Parmesan and fresh basil.
Notes
- Cook pasta separately if storing leftovers to prevent it from getting mushy.
- Use coconut milk instead of heavy cream for a dairy-free option.
- Add red pepper flakes for extra spice.
