  • 1 (19 oz) bag frozen cheese tortellini
  • 2 tbsp olive oil
  • 1 ½ lbs boneless, skinless chicken breasts (cut into bite-sized pieces)
  • ½ tsp black pepper
  • ½ tsp Italian seasoning
  • ½ tsp paprika
  • 2 tbsp butter
  • ½ cup sun-dried tomatoes (drained and sliced thin)
  • 3 tsp minced garlic
  • 1 cup low-sodium chicken broth
  • 2 cups heavy cream
  • 1 tsp Italian seasoning
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 cup finely shredded parmesan cheese
  • 2 cups baby spinach (chopped)

Instructions

  • Cook the Chicken: Season the chicken with black pepper, Italian seasoning, and paprika. Heat olive oil in a large skillet over medium-high heat. Cook the chicken for 6-8 minutes until golden brown. Remove and set aside.
  • Prepare the Sauce: Lower heat to medium-low. Melt butter and sauté garlic and sun-dried tomatoes for 30 seconds. Add chicken broth, heavy cream, Italian seasoning, black pepper, and paprika. Simmer and whisk in parmesan cheese until smooth.
  • Cook the Tortellini: Boil the tortellini according to package instructions. Drain and set aside.
  • Combine Everything: Stir in spinach, cooked chicken, and tortellini. Let simmer for 2-3 minutes.
  • Serve: Garnish with extra parmesan and fresh parsley. Enjoy!

  • For a lighter version, use half-and-half instead of heavy cream.
