- 1 ½ lbs boneless, skinless chicken breasts (cut into bite-sized pieces)
- ½ tsp black pepper
- ½ tsp Italian seasoning
- ½ tsp paprika
- 2 tbsp butter
- ½ cup sun-dried tomatoes (drained and sliced thin)
- 3 tsp minced garlic
- 1 cup low-sodium chicken broth
- 2 cups heavy cream
- 1 tsp Italian seasoning
- 1 tsp black pepper
- 1 tsp paprika
- 1 cup finely shredded parmesan cheese
- 2 cups baby spinach (chopped)
Instructions
- Cook the Chicken: Season the chicken with black pepper, Italian seasoning, and paprika. Heat olive oil in a large skillet over medium-high heat. Cook the chicken for 6-8 minutes until golden brown. Remove and set aside.
- Prepare the Sauce: Lower heat to medium-low. Melt butter and sauté garlic and sun-dried tomatoes for 30 seconds. Add chicken broth, heavy cream, Italian seasoning, black pepper, and paprika. Simmer and whisk in parmesan cheese until smooth.
- Cook the Tortellini: Boil the tortellini according to package instructions. Drain and set aside.
- Combine Everything: Stir in spinach, cooked chicken, and tortellini. Let simmer for 2-3 minutes.
