Description

These Mashed Potato Balls are the ultimate way to transform leftover mashed potatoes into a crispy, cheesy, and flavorful treat. Easy to make and perfect for parties, snacks, or even as a fun side dish.


Ingredients

  • 2 cups cold leftover mashed potatoes
  • 1 large egg, lightly beaten
  • 1/4 cup real beef or turkey bacon bits
  • 3/4 cup shredded cheddar cheese
  • 2 tablespoons Italian parsley leaves, chopped
  • 1/2 cup dry bread crumbs
  • Oil for deep frying (Canola or vegetable oil works best)

Instructions

  • Place mashed potatoes in a large bowl and let them stand at room temperature for 30 minutes.
  • Add beaten egg, bacon bits, cheddar cheese, and parsley. Mix until well combined.
  • Form mixture into 1-inch balls and coat them thoroughly with bread crumbs.
  • Chill the balls in the refrigerator for 15 to 30 minutes.
  • Heat oil in a skillet to 375°F (190°C). Fry the potato balls in batches for 2-3 minutes until golden brown and crispy.
  • Remove and drain on paper towels. Serve hot.

Notes

  • For a gluten-free version, use gluten-free breadcrumbs or almond flour.
  • You can bake them at 400°F (200°C) for 15-20 minutes if you prefer not to fry them.
