- 2 cups cold leftover mashed potatoes
- 1 large egg, lightly beaten
- 1/4 cup real beef or turkey bacon bits
- 3/4 cup shredded cheddar cheese
- 2 tablespoons Italian parsley leaves, chopped
- 1/2 cup dry bread crumbs
- Oil for deep frying (Canola or vegetable oil works best)
Instructions
- Place mashed potatoes in a large bowl and let them stand at room temperature for 30 minutes.
- Add beaten egg, bacon bits, cheddar cheese, and parsley. Mix until well combined.
- Form mixture into 1-inch balls and coat them thoroughly with bread crumbs.
- Chill the balls in the refrigerator for 15 to 30 minutes.
- Heat oil in a skillet to 375°F (190°C). Fry the potato balls in batches for 2-3 minutes until golden brown and crispy.
- Remove and drain on paper towels. Serve hot.
Notes
- For a gluten-free version, use gluten-free breadcrumbs or almond flour.
- You can bake them at 400°F (200°C) for 15-20 minutes if you prefer not to fry them.
