Ingredients

Scale
  • Shortbread Crust:
    • 1 cup unsalted butter, softened
    • 2 cups all-purpose flour
    • 1/2 cup granulated sugar
    • 1/4 teaspoon salt
  • Caramel Filling:
    • 1 cup unsalted butter
    • 1 cup packed brown sugar
    • 1 can (14 ounces) sweetened condensed milk
    • 4 tablespoons light corn syrup
    • 1/4 teaspoon salt
  • Chocolate Ganache:
    • 1 1/2 cups chopped dark chocolate (or chocolate chips)
    • 1/3 cup heavy cream

Instructions

  1. Prepare the Shortbread Crust:

    • Preheat oven to 350°F (175°C). Grease a 9×13-inch pan and line it with parchment paper.
    • Mix softened butter, flour, sugar, and salt until a crumbly dough forms.
    • Press dough evenly into the prepared pan and bake for 12-15 minutes, until lightly golden. Let cool.
  2. Make the Caramel Filling:

    • In a saucepan, combine butter, brown sugar, condensed milk, and corn syrup. Heat over medium, stirring constantly.
    • Once it boils, reduce heat and simmer for 5-7 minutes until thickened and golden.
    • Stir in salt and pour caramel over the cooled crust. Let cool to room temperature, then refrigerate until firm.
  3. Prepare the Ganache:

    • Combine chocolate and cream in a heatproof bowl. Microwave in 20-second intervals, stirring until melted.
    • Pour ganache over the chilled caramel layer and spread evenly.
    • Refrigerate until set (about 30 minutes).
  4. Slice and Serve:

    • Lift the bars from the pan using parchment paper.
    • Slice into squares using a warm, sharp knife.
    • Serve and enjoy!

Notes

  • For cleaner slices, chill the bars thoroughly and warm your knife before cutting.
  • Store in an airtight container in the refrigerator for up to one week.
  • To freeze, wrap individual pieces and store in a freezer-safe bag for up to 3 months.
