Description

Mini chicken and waffles are the ultimate bite-sized appetizer! Crispy fried chicken paired with fluffy waffles is a crowd-pleasing, sweet-savory combo.


Ingredients

  • 1 ½ pounds chicken tenders, cut into bite-sized pieces
  • 1 ¼ cups all-purpose flour
  • ½ cup cornstarch
  • 1 teaspoon cayenne pepper (optional)
  • 1 tablespoon dried Italian herb seasoning
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon salt
  • 1 cup buttermilk
  • Canola or peanut oil (for frying)
  • Pre-made or homemade waffles, cut into bite-sized squares

Instructions

  • Heat 3 inches of oil in a pot to 350°F.
  • Cut waffles into bite-sized squares and keep warm in a 250°F oven.
  • In a bowl, mix flour, cornstarch, cayenne pepper, Italian herbs, black pepper, and salt.
  • Coat chicken pieces in the dry mix, dip in buttermilk, then coat again in the flour mixture.
  • Fry chicken in batches for 3-4 minutes until golden brown. Drain on paper towels.
  • Assemble: Place a chicken piece on each waffle square, secure with a toothpick, and serve with maple syrup or hot sauce.
