			- 1 ½ pounds chicken tenders, cut into bite-sized pieces
 - 1 ¼ cups all-purpose flour
 - ½ cup cornstarch
 - 1 teaspoon cayenne pepper (optional)
 - 1 tablespoon dried Italian herb seasoning
 - 1 teaspoon freshly ground black pepper
 - 1 teaspoon salt
 - 1 cup buttermilk
 - Canola or peanut oil (for frying)
 - Pre-made or homemade waffles, cut into bite-sized squares
 
Instructions
- Heat 3 inches of oil in a pot to 350°F.
 - Cut waffles into bite-sized squares and keep warm in a 250°F oven.
 - In a bowl, mix flour, cornstarch, cayenne pepper, Italian herbs, black pepper, and salt.
 - Coat chicken pieces in the dry mix, dip in buttermilk, then coat again in the flour mixture.
 - Fry chicken in batches for 3-4 minutes until golden brown. Drain on paper towels.
 - Assemble: Place a chicken piece on each waffle square, secure with a toothpick, and serve with maple syrup or hot sauce.
