Description

These Mini Quesadillas are a fun twist on the classic quesadilla, using crispy wonton wrappers stuffed with black beans, Pepper Jack cheese, and scallions. Lightly fried and served with salsa, guacamole, and sour cream, they’re a crowd-pleasing appetizer that’s easy to make in under 40 minutes!


Ingredients

  • 1½ cups refried black beans
  • 1½ cups grated Pepper Jack cheese
  • 3 tablespoons sliced scallions (plus more for garnish)
  • Vegetable oil (for frying)
  • Fresh cilantro (for garnish)
  • Salsa, sour cream, and guacamole (for serving)

Instructions

  1. Spread 1 tablespoon of black beans on one side of a wonton wrapper.
  2. Top with 1 tablespoon of cheese and ⅓ teaspoon scallions.
  3. Fold wrapper in half diagonally, sealing edges firmly.
  4. Heat ½ inch of vegetable oil in a skillet over medium heat.
  5. Fry quesadillas in batches for 1–2 minutes per side until golden and crispy.
  6. Drain on paper towels. Garnish with scallions and cilantro. Serve with dips.
