Description

These Mini Spinach-Ricotta Calzones are quick, easy, and packed with creamy ricotta, spinach, and mozzarella, all wrapped in golden, flaky pizza dough. They’re perfect for appetizers, snacks, or light meals.


Ingredients

  • 1 pound frozen chopped spinach, thawed and squeezed
  • Kosher salt and freshly ground black pepper
  • 2 pounds pizza dough, divided into 12 pieces
  • ¾ cup grated mozzarella cheese
  • ¼ cup extra-virgin olive oil
  • 12 tablespoons ricotta cheese (approx. 1 tbsp per calzone)

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Mix thawed, well-drained spinach with salt, pepper, and optional minced garlic.
  3. Divide dough into 12 pieces and stretch into 4-inch circles.
  4. Add 1 tablespoon ricotta, 1 heaping spoonful spinach, and 1 tablespoon mozzarella to each circle.
  5. Fold dough over filling and seal edges with a fork. Cut small vents in tops.
  6. Brush with olive oil and bake for 10–15 minutes until golden.
  7. Cool for 5 minutes and serve.

  • Customize filling with extras like sun-dried tomatoes or crumbled turkey sausage.
