No-Bake Biscoff Cookie Truffles

Description

These rich and creamy no-bake Biscoff cookie truffles are made with just four simple ingredients and coated in smooth white chocolate. Perfect for parties, gifting, or a sweet treat anytime.


Ingredients

  • 24 Biscoff cookies (about 200g)

  • 1/2 cup (120g) Biscoff cookie butter

  • 4 oz (115g) cream cheese, softened

  • 10 oz (285g) white chocolate

  • Optional: 2 tbsp extra cookie butter for drizzle


Instructions

  • Pulse Biscoff cookies into crumbs using a food processor.

  • Microwave 1/4 cup cookie butter for 15–20 seconds until soft.

  • Combine cookie crumbs, softened cookie butter, and cream cheese in processor. Blend into a dough.

  • Roll dough into 1-inch balls and chill for 1 hour.

  • Melt white chocolate in 30-second intervals.

  • Dip each chilled truffle into melted chocolate, place on parchment paper.

  • Chill again for 1 hour or until set.

  • Optional: drizzle with melted cookie butter before serving.

Notes

  • Use softened cream cheese for easier mixing.
  • Let truffles firm up completely before dipping in chocolate.
  • Store in fridge for up to a week or freeze for longer.
