24 Biscoff cookies (about 200g)

1/2 cup (120g) Biscoff cookie butter

4 oz (115g) cream cheese, softened

10 oz (285g) white chocolate

Optional: 2 tbsp extra cookie butter for drizzle
Instructions

Pulse Biscoff cookies into crumbs using a food processor.

Microwave 1/4 cup cookie butter for 15–20 seconds until soft.

Combine cookie crumbs, softened cookie butter, and cream cheese in processor. Blend into a dough.

Roll dough into 1-inch balls and chill for 1 hour.

Melt white chocolate in 30-second intervals.

Dip each chilled truffle into melted chocolate, place on parchment paper.

Chill again for 1 hour or until set.

Optional: drizzle with melted cookie butter before serving.

- Use softened cream cheese for easier mixing.
