Ingredients

  • 1 lb shrimp (peeled & deveined)
  • 1 tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tsp Old Bay seasoning
  • ½ tsp paprika
  • ½ tsp cumin
  • 1 small onion (chopped)
  • 1 green bell pepper (diced)
  • 2 cloves garlic (minced)
  • 4 large flour tortillas
  • 1 cup cooked rice (white or brown)
  • 1 cup black beans (drained & rinsed)
  • 1 cup shredded Mexican cheese
  • 1 cup shredded lettuce
  • ½ cup pico de gallo
  • 1 avocado (sliced)
  • 2 tbsp fresh chives (chopped)

Old Bay Aioli:

  • ½ cup mayonnaise
  • 1 tsp Old Bay seasoning
  • 1 tsp Sriracha (optional)
  • 1 tbsp fresh lime juice
  • 1 tbsp water (if needed)

Instructions

  • Prepare the Aioli: Mix mayonnaise, Old Bay, lime juice, and Sriracha. Thin with water if needed. Set aside.
  • Cook the Shrimp: Heat olive oil in a pan. Sauté onion and bell pepper for 3-4 minutes. Add garlic, shrimp, and seasonings. Cook until shrimp is pink (about 3-4 minutes per side).
  • Assemble the Burritos: Warm tortillas, then layer with rice, beans, shrimp, cheese, lettuce, pico de gallo, and avocado. Drizzle with aioli.
  • Roll the Burritos: Fold in the sides, then roll tightly. Toast in a dry skillet for a crispy finish (optional).
  • Serve: Slice in half and enjoy with extra aioli and fresh chives!
