			- 2 lbs beef chuck, cut into 1-inch cubes
 - ¼ cup all-purpose flour
 - ½ teaspoon salt
 - ½ teaspoon black pepper
 - 3 tablespoons olive oil
 - 1 large onion, chopped
 - 3 cloves garlic, minced
 - 4 cups beef broth
 - 1 tablespoon tomato paste
 - 1 teaspoon dried thyme
 - 2 bay leaves
 - 3 carrots, peeled and sliced
 - 2 potatoes, peeled and cubed
 - 1 cup frozen peas
 - ¼ cup fresh parsley, chopped (for garnish)
 
Instructions
- Coat the beef in flour, salt, and black pepper.
 - Sear the beef in olive oil over medium-high heat until browned. Remove and set aside.
 - Sauté onions and garlic in the same pot until softened.
 - Add beef back to the pot along with beef broth, tomato paste, thyme, and bay leaves. Bring to a boil.
 - Simmer covered for 1 hour on low heat.
 - Add carrots and potatoes and simmer for another hour until tender.
 - Stir in peas and cook for 5 minutes.
 - Remove bay leaves, garnish with parsley, and serve hot.
 
Notes
- For extra richness, add a splash of red wine.
 - Use cornstarch slurry to thicken the broth if needed.
 - Serve with crusty bread for the best experience.
