Description

This old-fashioned vanilla ice cream is rich, creamy, and full of nostalgic flavor. Made with eggs, milk, and vanilla, it’s the perfect summer treat and an easy crowd-pleaser for any occasion.


Ingredients

  • 6 large eggs

  • 1¼ cups cane sugar

  • 4 teaspoons vanilla extract

  • 1 can (14 oz) sweetened condensed milk

  • 2 cans (12 oz each) evaporated milk

  • 1 teaspoon sea salt

  • 6 cups whole milk

  • For freezing: ~16 lbs crushed ice + 3 cups rock salt


Instructions

  • In a bowl, whisk eggs and sugar until smooth.

  • Stir in vanilla, condensed milk, evaporated milk, and salt.

  • Pour into ice cream maker canister.

  • Add whole milk until ¾ full.

  • Place in bucket, surround with ice and salt.

  • Churn until set (about 30–45 minutes).

  • Serve soft or freeze for 3–4 hours for firmer texture.

  • Use high-quality vanilla for best flavor.
  • Chill base for quicker churning.
  • Let ice cream soften slightly before scooping from freezer.
  • For egg safety, temper eggs by heating base to 160°F.
