This one pan balsamic chicken is a fast and flavorful weeknight dinner. Juicy chicken breasts are simmered in a tangy-sweet balsamic glaze, topped with fresh tomatoes, melty mozzarella, and fragrant basil, then baked to perfection.
Ingredients

4 boneless, skinless chicken breasts

1/4 cup balsamic vinegar

1 tbsp Dijon mustard

Instructions

Whisk balsamic vinegar, honey, mustard, oil, garlic, and Italian seasoning to make the sauce.

Combine tomatoes, mozzarella, and basil in a bowl. Set aside.

Pound chicken to even thickness, season with salt and pepper.

Sear chicken in hot skillet (3–4 min per side).

Pour sauce into skillet and simmer 3–4 minutes.
