Description

This one pan balsamic chicken is a fast and flavorful weeknight dinner. Juicy chicken breasts are simmered in a tangy-sweet balsamic glaze, topped with fresh tomatoes, melty mozzarella, and fragrant basil, then baked to perfection.


Ingredients

  • 4 boneless, skinless chicken breasts

  • 1 tbsp avocado oil (for searing)

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1/4 cup balsamic vinegar

  • 1 tbsp honey

  • 1 tbsp Dijon mustard

  • 1 tbsp avocado oil (for sauce)

  • 2 cloves garlic, minced

  • 1 tsp Italian seasoning

  • 1 cup grape tomatoes, halved

  • 3/4 cup fresh mozzarella balls (ciliegine or pearls), halved if large

  • 1/4 cup fresh basil, chopped


Instructions

  • Whisk balsamic vinegar, honey, mustard, oil, garlic, and Italian seasoning to make the sauce.

  • Combine tomatoes, mozzarella, and basil in a bowl. Set aside.

  • Pound chicken to even thickness, season with salt and pepper.

  • Sear chicken in hot skillet (3–4 min per side).

  • Pour sauce into skillet and simmer 3–4 minutes.

  • Top chicken with tomato-mozzarella mixture.

  • Bake at 400°F for 18–23 minutes, until chicken is cooked through.

  • Rest 5 minutes before serving. Spoon sauce over top and enjoy.

Notes

  • Pound chicken for even cooking and juiciness.
  • Drain mozzarella to avoid excess moisture.
  • For a spicier twist, add a pinch of crushed red pepper to the sauce.
  • Use a meat thermometer to check doneness (165°F internal temp).
  • Substitute thighs for a richer flavor—reduce bake time slightly.
