Ingredients

  • 12 oz pasta (penne, rotini, or fusilli)
  • 1 lb Italian sausage (mild or spicy)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes (optional)
  • 1 (14.5 oz) can diced tomatoes
  • 2 ½ cups chicken broth
  • ½ cup heavy cream (or milk)
  • 1 cup mozzarella cheese, shredded
  • ¼ cup Parmesan cheese, grated
  • 1 tbsp olive oil
  • Salt & black pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  • Cook the sausage – Heat oil in a large skillet. Brown the sausage, breaking it apart.
  • Sauté aromatics – Add onion and garlic, cooking until fragrant.
  • Add liquids & pasta – Stir in tomatoes, broth, seasoning, and uncooked pasta. Bring to a boil, then simmer until pasta is tender.
  • Make it creamy – Stir in heavy cream, mozzarella, and Parmesan until smooth.
  • Final touches – Adjust seasoning, garnish with fresh herbs, and serve hot!

Notes

  • If pasta absorbs too much liquid, add a splash of broth or milk.
  • Use turkey or plant-based sausage for a lighter version.
