Follow these simple steps to create your One Pot Chicken Orzo with ease:
1. Heat the Oil: In a large pot, heat the olive oil over medium heat.
2. Cook the Chicken: Add the chopped chicken pieces to the pot. Season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes. Remove the chicken and set it aside.
3. Sauté the Vegetables: In the same pot, add the chopped onion and bell pepper. Sauté for about 3-4 minutes until softened. Then add the minced garlic and sauté for an additional minute until fragrant.
4. Add the Broth: Pour in the chicken broth and bring the mixture to a boil.
5. Add the Orzo and Tomatoes: Stir in the orzo and diced tomatoes. Reduce the heat to a simmer.
