Ingredients

  • 1 tbsp olive oil
  • 1 lb ground beef or Italian sausage
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tsp Italian seasoning
  • 1 (15 oz) can tomato sauce
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 4 cups chicken or beef broth
  • 8 lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Fresh basil for garnish (optional)

Instructions

  • Heat olive oil in a large pot over medium heat. Brown ground beef or sausage and drain excess grease.
  • Add onions and garlic, cooking until softened. Stir in salt, pepper, and Italian seasoning.
  • Pour in tomato sauce, diced tomatoes, and broth. Bring to a gentle boil.
  • Add broken lasagna noodles and simmer for 20 minutes until tender.
  • In a small bowl, mix ricotta, mozzarella, and Parmesan.
  • Serve the soup with a spoonful of the cheese mixture on top and garnish with fresh basil.

  • Substitute ground beef with ground turkey or a vegetarian alternative.
  • For a spicier version, add red pepper flakes.
