			- 1 tbsp olive oil
 - 1 lb ground beef or Italian sausage
 - 1 medium onion, chopped
 - 3 garlic cloves, minced
 - 1 tsp salt
 - ½ tsp black pepper
 - 2 tsp Italian seasoning
 - 1 (15 oz) can tomato sauce
 - 1 (14.5 oz) can diced tomatoes, undrained
 - 4 cups chicken or beef broth
 - 8 lasagna noodles, broken into pieces
 - 1 cup ricotta cheese
 - 1 cup shredded mozzarella cheese
 - ½ cup grated Parmesan cheese
 - Fresh basil for garnish (optional)
 
Instructions
- Heat olive oil in a large pot over medium heat. Brown ground beef or sausage and drain excess grease.
 - Add onions and garlic, cooking until softened. Stir in salt, pepper, and Italian seasoning.
 - Pour in tomato sauce, diced tomatoes, and broth. Bring to a gentle boil.
 - Add broken lasagna noodles and simmer for 20 minutes until tender.
 - In a small bowl, mix ricotta, mozzarella, and Parmesan.
 - Serve the soup with a spoonful of the cheese mixture on top and garnish with fresh basil.
