Ingredients

  • 4 large russet potatoes, scrubbed and sliced into 1/4-inch rounds

  • 1/3 cup olive oil

  • 1/2 cup grated Parmesan cheese

  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

  • 1 teaspoon garlic powder

  • Salt and freshly ground black pepper, to taste

  • Fresh parsley for garnish (optional)


Instructions

  • Preheat oven to 400°F (200°C).

  • Toss potato slices in olive oil until evenly coated.

  • Arrange slices in a single layer on a parchment-lined baking sheet.

  • Mix Parmesan, thyme, garlic powder, salt, and pepper. Sprinkle generously over potatoes.

  • Bake for 20-25 minutes, flipping halfway through.

  • Garnish with parsley and serve hot.

Notes

  • For extra crispiness, place potatoes on a wire rack over the baking sheet.
