Ingredients

4 chicken breasts (or 2 large, halved)

1 tsp salt

½ tsp black pepper

2 tbsp olive oil

½ cup grated Parmesan

½ cup panko breadcrumbs

3–4 garlic cloves, minced

1 tbsp olive oil (for sauce)

1 cup light or heavy cream
-
½ cup grated Parmesan (for sauce)

½ tsp Italian seasoning
-
1 cup chopped spinach (optional)

Salt & pepper to taste
Instructions

Pat chicken dry, season with salt and pepper.

Mix parmesan and panko in a shallow bowl. Coat chicken.

Heat olive oil in a skillet, sear chicken 3–4 min per side until golden. Set aside.

In same skillet, sauté garlic in olive oil. Add cream, seasoning, and parmesan. Simmer.

Stir in spinach (optional). Return chicken to pan.

Simmer 5–7 min until chicken is cooked through (165°F). Serve with sauce.
Notes
- Use freshly grated parmesan for better flavor and texture.
- Don’t skip resting the chicken—juicier results.
- Add lemon zest or chili flakes to adjust flavor profile.
